I have spent time in many of their kitchens (professional and others) and learned so much about the true cooking styles from many of the regions. I recently saw a re-run of a Julia Child's "Cooking with Master Chefs" when you took her through several pizza making processes. I look forward to visiting your restaurants when I'm next in DC. Anout the salumi, as you know I love Slaumeria Biellese from NY. The owner is from Biella few Km from my huose back in Italy. I did not change anything on the list for now.
