I have spent many years traveling through Italy.
I have spent time in many of their kitchens (professional and others) and learned so much about the true cooking styles from many of the regions.
I recently saw a re-run of a Julia Child's "Cooking with Master Chefs" when you took her through several pizza making processes.
I look forward to visiting your restaurants when I'm next in DC.
